[What I Made] Creamy Chicken and Black Bean Soup

 Okay, so I have had a brand new crock pot for almost a month now and tonight I decided to bust it out.  We had some leftovers and some lonely cans in the pantry and fridge, so I threw them all together and made a really yummy dinner. :]
Shiny. :]
Here's what you'll need:
  • Shredded, cooked chicken
  • 1 can Rotel
  • 1 can green enchilada sauce
  • 1 can black beans
  • Taco sauce
  • Cream cheese
Pretty much, just dump all that into the crock pot and cook on high for two hours.
In the bottoms of the bowls, I put some Whole Grain Medley Santa Fe rice (in the Uncle Ben's Ready Pouches).
When it's time to eat, give the soup a good stir, making sure all the cream cheese is incorporated.
Spoon the soup over the rice and mix together (or leave layered. Either is fine.).
Top with cheese and sour cream (not pictured) and add a warm rolled tortilla for dipping.
This was a super simple, super easy dinner. Both Husband and Bear, not to mention our neighbors, loved it. Plus, it's a good way to get rid of that leftover chicken.

Wow…He Really IS Spoiled…

The husband is in California. He eats “cafeteria food” and fast food. No good home-cooked meals for my love. Sad day.

I hate that I can’t make him dinner every night. Like…I hate it a lot.

So, I do the next best thing.

Red Velvet Death

So, I was making some red velvet swirl brownies for the husband, and I decided to have Lynne snap a couple of shots…

…and I just realized I am making the same squinchy face in all of them…Fail. Le sigh.

On another note, the cream cheese layer on aforementioned brownies is delish. Yum. That is all.

Brown Sugar Cinnamon French Toast

Recipe time!!

What you will need:

  • 4 eggs
  • 3/4 cup of milk
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • 1 tablespoon vanilla
  • Bread
  • Cinnamon

1: crack eggs into a bowl; whisk until slightly frothy.

2: Add milk, a little bit at a time. Whisk until frothy.

3: Add vanilla, brown sugar and white sugar. whisk until frothy.

4: Spray or butter your griddle.

5: Dip bread slices quickly in the egg mixture, making sure not to “soak”. Place on griddle.

6: Sprinkle cinnamon over the side of the bread facing “up”.

7: Cook over medium heat until bottom is a nice golden brown. Flip.

8: When done cooking, place a small dollop of butter on toast.

9: Serve with hot syrup, jam, fruit, powdered sugar…the possibilities are endless.

Avocadoes = Best Food Ever

 

Matheson LOVES avocadoes. It’s awesome.

I rolled the ‘cado around to loosen it from the peel, then peeled and pitted it. I scooped the “meat” onto a plate, mashed it up with a fork till it was smooth and creamy, then mixed it with some rice cereal.

he loves the food a bit thicker, that way it doesn’t just dribble out of his mouth.

Chicken Salad With Verde Ranch

Recipe time!!

I made this totally yummy recipe for dinner tonight. It's pretty awesome. I did make some (a lot) of changes to the original recipe, so I will put my alterations at the bottom.

Cafe Rio Chicken (Original Recipe):

3 Tomatillos (outer paper removed and cut into quarters)
1-2 Jalapeno (seeded)
2 Cloves garlic
1/2 bunch Cilantro
1 cup Mayo
1 packet Buttermilk Ranch Dressing powder
1/2 cup buttermilk
1 squirt lime juice

Put all ingredients in the blender and mix it up! I normally buy a package of Spanish rice and put the rice on a bed of salad with cooked chicken and some cheese. Then use the dressing over all. Yummy!

 Yeah...I don't quite do that...

Chicken Salad With Verde Ranch (Altered Recipe):

1 jar of Herdez Verde Salsa
3 cloves garlic
1 cup mayonnaise (or so)
1 packet of buttermilk ranch powder
1 jalapeno, seeded
1 jalapeno, not seeded
1 avocado
8 ounces cream cheese
1 cup buttermilk (or so)
juice of one (1) whole lime

Put all the ingredients into a blender and blend it up. Cut up some romaine lettuce, cook some Spanish rice, bake/boil/pan fry some chicken and go nuts. :]


The original recipe IS good. Just a bit too thin for my tastes. So I changed it up till I found a good consistency. The altered recipe is a bit spicier. If you want it to be a tad bit cooler to the palate, only use one jalapeno.
